A creamy and flavorful aged Parmesan risotto, perfect for a comforting meal.

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated aged Parmesan cheese
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat the broth in a saucepan and keep it warm on low heat.
  2. In a large pan, melt butter and olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Stir in the Arborio rice and cook for 2 minutes.
  5. Pour in the white wine (if using) and stir until absorbed.
  6. Add a ladle of warm broth and stir until absorbed. Repeat until rice is creamy and tender (about 18-20 minutes).
  7. Remove from heat, stir in grated Parmesan, and season with salt and pepper.
  8. Serve immediately.
