- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup grated aged Parmesan cheese
- 1 small onion, finely chopped
- 2 tbsp butter
- 1/4 cup white wine (optional)
- Salt and pepper to taste
- 1 tbsp olive oil
