Quick and healthy breakfast cups made with egg whites in the air fryer.

Ingredients

  • 6 large egg whites
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced spinach
  • 1/4 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, whisk the egg whites until frothy.
  3. Add the diced bell peppers, onions, spinach, salt, and black pepper to the egg whites. Mix well.
  4. Lightly grease the air fryer cups or molds.
  5. Pour the egg white mixture into the cups, filling each about 3/4 full.
  6. Sprinkle shredded cheese on top.
  7. Place the cups in the air fryer basket.
  8. Cook for 8-10 minutes or until the egg whites are set.
  9. Remove from the air fryer and let cool for 2 minutes before serving.

Notes

  • You can substitute vegetables with your favorites.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Reheat in the air fryer for 2-3 minutes before serving.
