Quick and healthy breakfast cups made with egg whites in the air fryer.

- 6 large egg whites
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup diced spinach
- 1/4 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the air fryer to 350°F (175°C).
- In a bowl, whisk the egg whites until frothy.
- Add the diced bell peppers, onions, spinach, salt, and black pepper to the egg whites. Mix well.
- Lightly grease the air fryer cups or molds.
- Pour the egg white mixture into the cups, filling each about 3/4 full.
- Sprinkle shredded cheese on top.
- Place the cups in the air fryer basket.
- Cook for 8-10 minutes or until the egg whites are set.
- Remove from the air fryer and let cool for 2 minutes before serving.
Notes
- You can substitute vegetables with your favorites.
- Store leftovers in an airtight container in the fridge for up to 2 days.
- Reheat in the air fryer for 2-3 minutes before serving.
