Ingredients

  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup shredded low-fat cheddar cheese
  • 1 whole wheat tortilla
  • 1/2 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Heat olive oil in a pan over medium heat and sauté bell peppers and onions until soft.
  3. Add black beans and cook for another 2 minutes.
  4. Scramble the eggs in the same pan until fully cooked.
  5. Place the tortilla on a flat surface and layer the scrambled eggs, sautéed vegetables, and cheese.
