A simple and healthy dish made with bell peppers stuffed with a flavorful mixture of rice, vegetables, and spices, cooked in an air fryer for a crispy texture.

Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Cut the tops off the bell peppers and remove the seeds.
  2. In a bowl, mix the rice, black beans, corn, tomatoes, cheese, chili powder, cumin, garlic powder, salt, and pepper.
  3. Stuff the peppers with the mixture.
  4. Brush the outside of the peppers with olive oil.
  5. Preheat the air fryer to 375°F (190°C).
  6. Place the stuffed peppers in the air fryer basket.
  7. Cook for 12-15 minutes until the peppers are tender and slightly charred.
  8. Serve warm.

Notes

  • Use any type of rice or grains you prefer.
  • Add cooked ground meat for extra protein.
  • Adjust spices to your taste.
