A hearty and flavorful soup combining the rich tastes of beef, sausage, and lasagna noodles in a savory tomato broth.

Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef and sausage in a large pot over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes, beef broth, water, basil, oregano, and red pepper flakes.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with ricotta and mozzarella cheese.

  • For a spicier soup, use hot Italian sausage.
