A classic French beef stew made with red wine, beef, and vegetables.

  • 2 lbs beef chuck, cut into chunks
  • 4 slices bacon, chopped
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bottle red wine (750ml)
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • 8 oz mushrooms, sliced
  • 2 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. Brown beef chunks in the bacon fat. Remove and set aside.
  3. Sauté onions, carrots, and garlic until softened.
  4. Add flour and stir for 1 minute.
  5. Pour in wine and broth, then add tomato paste, thyme, and bay leaf.
  6. Return beef and bacon to the pot. Simmer for 2 hours.
  7. Add mushrooms and cook for another 30 minutes.
  8. Remove bay leaf and serve hot.

Notes

  • Use a dry red wine like Pinot Noir or Burgundy.
  • Marinate the beef in wine overnight for extra flavor.
  • Serve with mashed potatoes or crusty bread.
