A classic French beef stew made with tender beef, red wine, and vegetables.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • 8 oz mushrooms, sliced
  • Salt and pepper to taste

Instructions

  1. Cook bacon in a large pot until crispy. Remove and set aside.
  2. Sear beef cubes in the bacon fat until browned. Remove and set aside.
  3. Sauté onions, carrots, and garlic until softened.
  4. Add wine, broth, tomato paste, thyme, and bay leaf. Bring to a simmer.
  5. Return beef and bacon to the pot. Cover and cook on low heat for 2 hours.
  6. Add mushrooms and cook for another 30 minutes.
  7. Season with salt and pepper. Serve hot.

Notes

  • Use a dry red wine like Pinot Noir or Burgundy.
  • For best results, cook slowly on low heat.
  • Serve with mashed potatoes or crusty bread.
