A hearty beef stew made easily in your slow cooker with tender meat and rich flavors.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp flour
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and brown the beef cubes on all sides.
  2. Transfer the beef to the slow cooker.
  3. Sprinkle flour over the beef and stir to coat.
  4. Add onion, carrots, potatoes, and garlic to the slow cooker.
  5. Pour in beef broth and stir in tomato paste.
  6. Add thyme, rosemary, bay leaf, salt, and pepper.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Remove the bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew before serving.
  • You can add peas or mushrooms for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
