- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp flour
- 2 tbsp olive oil
- Heat olive oil in a pan and brown the beef cubes on all sides.
- Transfer the beef to the slow cooker.
- Sprinkle flour over the beef and stir to coat.
- Add onion, carrots, potatoes, and garlic to the slow cooker.
- Pour in beef broth and stir in tomato paste.
- Add thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove the bay leaf before serving.
Notes
- For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew before serving.
- You can add peas or mushrooms for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
