- 2 lbs beef stew meat, cubed
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- Brown the beef in a skillet over medium heat.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, and garlic.
- Pour in beef broth and stir in tomato paste.
- Add thyme, rosemary, bay leaf, salt, and pepper.
- Cook on low for 8 hours or high for 4 hours.
- Remove bay leaf before serving.
Notes
- For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
- You can add peas or mushrooms if desired.
