A hearty beef stew made in a slow cooker for tender meat and rich flavors.

Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Transfer the beef to the slow cooker.
  3. Add carrots, potatoes, onion, and garlic.
  4. Pour in beef broth and stir in tomato paste.
  5. Add thyme, rosemary, bay leaf, salt, and pepper.
  6. Cook on low for 8 hours or high for 4 hours.
  7. Remove bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
  • You can add peas or mushrooms if desired.
