Baba ganoush is a creamy Middle Eastern dip made from roasted eggplant, tahini, garlic, and lemon juice. It’s perfect for dipping or spreading.

Ingredients

  • 2 medium eggplants
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pierce eggplants with a fork and roast for 45 minutes until soft.
  3. Let eggplants cool, then peel and discard skin.
  4. Mash eggplant flesh in a bowl.
  5. Add tahini, garlic, lemon juice, olive oil, salt, and cumin. Mix well.
