  • 1 pound ham, diced
  • 1 cup dried navy beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute.
  3. Add the diced ham, soaked beans, chicken broth, bay leaf, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  5. Remove bay leaf, season with salt and pepper.
  6. Serve hot.
