Blueberry crumble bars are a delicious dessert with a buttery crust, sweet blueberry filling, and crunchy crumble topping.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 375°F. Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Stir in egg to form a dough.
  3. Press half the dough into the baking dish. Bake for 10 minutes.
  4. In another bowl, mix blueberries, sugar, lemon juice, and cornstarch. Spread over crust.
  5. Crumble remaining dough over the blueberry layer. Bake for 25-30 minutes until golden.
  6. Cool completely before cutting into bars.

Notes

  • Use frozen blueberries if fresh are not available.
  • Let bars cool fully to set properly.
  • Store in an airtight container for up to 3 days.
