  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup fresh blueberries
  • 1 tbsp flour (for coating blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Mix in milk, lemon zest, and lemon juice.
  6. Gradually fold in the dry ingredients until just combined.
  7. Toss blueberries with 1 tbsp flour, then gently fold into the batter.
  8. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Drizzle with lemon glaze if desired.
