- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 cup fresh blueberries
- 1 tbsp flour (for coating blueberries)
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Mix in milk, lemon zest, and lemon juice.
- Gradually fold in the dry ingredients until just combined.
- Toss blueberries with 1 tbsp flour, then gently fold into the batter.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
- Drizzle with lemon glaze if desired.
