Light and fluffy blinis topped with caviar make an elegant breakfast or brunch dish.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup milk
  • 1 egg
  • 1 tbsp melted butter
  • 2 oz caviar
  • 1/4 cup sour cream
  • Fresh dill for garnish

Instructions

  1. Whisk flour, sugar, salt, and baking powder in a bowl.
  2. Add milk, egg, and melted butter. Mix until smooth.
  3. Heat a non-stick pan over medium heat.
  4. Drop small spoonfuls of batter onto the pan.
  5. Cook until bubbles form, then flip and cook for another minute.
  6. Transfer blinis to a plate and let cool slightly.
  7. Top each blini with sour cream and a small spoonful of caviar.
  8. Garnish with fresh dill and serve immediately.
