  • 2 live Maine lobsters (11.5 lbs each)
  • 1 cup unsalted butter
  • 1/4 cup water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced
  • 2 sprigs fresh thyme

Instructions

  1. Bring a large pot of salted water to boil.
  2. Add lobsters and cook for 3 minutes.
  3. Remove lobsters and let cool.
  4. Crack shells and remove meat.
  5. In a saucepan, melt butter with water, salt, pepper, lemon, and thyme.
  6. Poach lobster meat in butter mixture for 5-7 minutes.
  7. Serve immediately.
