- 1 cup dried lentils, rinsed
- 4 cups chopped cabbage
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic, cumin, and paprika. Cook for 1 minute.
- Add lentils, cabbage, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 30 minutes until lentils are tender.

Notes
- You can use green or brown lentils for this recipe.
