A hearty and nutritious cabbage lentil soup that’s easy to make and packed with flavor.

Ingredients

  • 1 cup dried lentils, rinsed
  • 4 cups chopped cabbage
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  4. Add lentils, cabbage, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes until lentils are tender.
  6. Season with salt and pepper. Serve hot.

Notes

  • You can use green or brown lentils for this recipe.
  • Add more broth if you prefer a thinner soup.
