1 medium cabbage, chopped
2 carrots, sliced
1 onion, diced
2 celery stalks, chopped
3 garlic cloves, minced
4 cups vegetable broth
2 cups water
1 can (14 oz) diced tomatoes
1 tsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrots, and celery. Cook for 5 minutes.
Stir in cabbage and cook for another 3 minutes.
Pour in vegetable broth, water, and diced tomatoes.
Season with salt, pepper, and thyme.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Serve hot.
Notes
Store leftovers in the fridge for up to 3 days.
You can add other vegetables like bell peppers or zucchini.
