- 3 large oranges
- 2 cups sugar
- 1 cup water
- 8 oz dark chocolate, chopped
- Wash and peel the oranges, removing as much white pith as possible.
- Cut the peels into strips.
- Blanch the peels in boiling water for 10 minutes.
- Drain and rinse the peels.
- In a saucepan, combine sugar and water. Bring to a boil.
- Add the peels to the syrup and simmer for 45 minutes.
- Remove peels and let them cool on a wire rack.
- Melt the chocolate in a double boiler.
- Dip each peel in chocolate and place them on parchment paper to set.
- Let the chocolate harden before serving.
