A healthy alternative to traditional fried rice made with cauliflower.

Ingredients

  • 1 head cauliflower, grated
  • 2 tablespoons olive oil
  • 1 cup peas and carrots
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower into rice-sized pieces.
  2. Heat olive oil in a pan over medium heat.
  3. Add peas, carrots, and garlic, and sauté for 3-4 minutes.
  4. Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked.
  5. Add the grated cauliflower and soy sauce, mixing well.
  6. Cook for another 5-7 minutes until cauliflower is tender.
  7. Stir in green onions and season with salt and pepper.

Notes

  • For extra flavor, add sesame oil.
  • You can add other vegetables of your choice.
  • Store leftovers in an airtight container in the fridge.
