- 1 head cauliflower, grated
- 2 tablespoons olive oil
- 1 cup peas and carrots
- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- Salt and pepper to taste
- Grate the cauliflower into rice-sized pieces.
- Heat olive oil in a pan over medium heat.
- Add peas, carrots, and garlic, and sauté for 3-4 minutes.
- Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked.
- Add the grated cauliflower and soy sauce, mixing well.
- Cook for another 5-7 minutes until cauliflower is tender.
