- 1/2 cup all-purpose flour
- 1 tsp sugar
- 1/2 tsp salt
- 1 tsp active dry yeast
- 1 cup warm milk
- 2 eggs
- 2 tbsp melted butter
- 50g premium caviar
- 1/2 cup crème fraîche
- Fresh chives for garnish
- Mix flours, sugar, salt, and yeast in a bowl.
- Add warm milk, eggs, and melted butter. Whisk until smooth.
- Cover and let rest for 1 hour.
- Heat a skillet over medium heat. Spoon small amounts of batter to form blinis.
- Cook until bubbles form, then flip and cook for another minute.
- Let blinis cool slightly.
- Top each blini with crème fraîche and a small spoonful of caviar.
- Garnish with fresh chives.
