  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 cup crème fraîche
  • 2 oz caviar
  • Fresh dill for garnish

Instructions

  1. Mix flours, sugar, and salt in a bowl.
  2. Whisk milk and egg together, then stir into dry ingredients.
  3. Add melted butter and mix until smooth.
  4. Heat a skillet over medium heat and spoon small amounts of batter to form blinis.
  5. Cook until bubbles form, then flip and cook the other side.
  6. Let blinis cool slightly.
  7. Top each blini with crème fraîche and a small spoonful of caviar.
  8. Garnish with fresh dill.
