A creamy and cheesy cauliflower casserole that is comforting and delicious.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup of shredded cheddar cheese
  • 1 cup of cream cheese
  • 1/2 cup of sour cream
  • 1/2 cup of grated parmesan cheese
  • 1/4 cup of milk
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1/2 cup of breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the cauliflower florets until tender.
  3. In a mixing bowl, combine cream cheese, sour cream, milk, garlic powder, salt, and pepper.
  4. Add steamed cauliflower to the bowl and mix until well coated.
  5. Transfer the mixture to a baking dish.
  6. Top with shredded cheddar cheese and parmesan cheese.
  7. If using, sprinkle breadcrumbs on top.
  8. Bake for 25-30 minutes or until the cheese is bubbly and golden.

Notes

  • For a low-carb version, skip the breadcrumbs.
  • Feel free to add cooked bacon or other vegetables.
  • Let it cool slightly before serving.
