Ingredients

  • 2 cups cooked brown rice
  • 1 pound chicken breast, diced
  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place diced chicken and broccoli on a baking sheet.
  3. Drizzle with olive oil, soy sauce, garlic powder, salt, and pepper.
  4. Toss to coat evenly.
  5. Bake for 20-25 minutes until chicken is cooked through and broccoli is tender.
  6. Divide brown rice into meal prep containers.
  7. Top rice with chicken and broccoli.
  8. Allow to cool before sealing containers.
