A delicious and easy one-pot meal combining the flavors of chicken fajitas with pasta.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 8 oz penne pasta
  • 2 cups chicken broth
  • 1 tbsp fajita seasoning
  • 1 tbsp olive oil
  • 1/2 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add bell pepper, onion, and garlic. Cook for 3 minutes.
  4. Stir in pasta, chicken broth, and fajita seasoning.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Top with shredded cheese and serve.
