A comforting and flavorful soup combining tender chicken, rice, and a bright lemon twist.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup white rice
  • 4 cups chicken broth
  • 2 cups water
  • 2 lemons, juiced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Pour in chicken broth and water. Bring to a boil.
  4. Add rice and reduce heat. Simmer for 15 minutes.
  5. Stir in shredded chicken and lemon juice. Cook for 5 more minutes.
  6. Season with salt and pepper. Serve hot.

Notes

  • Use leftover chicken for convenience.
  • Adjust lemon juice to taste.
  • Store leftovers in the fridge for up to 3 days.
