Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 2 cups water
  • 1 lemon, juiced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until softened.
  3. Pour in chicken broth and water. Bring to a boil.
  4. Stir in rice, shredded chicken, salt, pepper, and oregano.
  5. Reduce heat to low. Simmer for 20 minutes or until rice is tender.
  6. Remove from heat. Stir in lemon juice.
  7. Serve hot.
