Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 cup white rice
  • 4 cups chicken broth
  • 2 cups water
  • 2 eggs, beaten
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced

Instructions

  1. Heat olive oil in a pot over medium heat. Add diced onion and sauté until soft.
  2. Pour in chicken broth and water. Bring to a boil.
  3. Add rice, reduce heat, and simmer for 15 minutes.
  4. Stir in shredded chicken and season with salt and pepper.
  5. Slowly pour in beaten eggs while stirring the soup.
  6. Remove from heat and mix in lemon juice.
