Ingredients

  • 2 chicken breasts
  • 1 red bell pepper
  • 1 zucchini
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the vegetables into bite-sized pieces.
  3. In a bowl, mix vegetables with olive oil, garlic powder, paprika, salt, and pepper.
  4. Place the chicken breasts on a baking sheet and surround with vegetables.
  5. Roast in the oven for 25-30 minutes until the chicken is cooked through.
  6. Let it rest for 5 minutes before slicing.
  7. Pack the chicken and veggies into meal boxes.
