- 1/2 cup cocoa powder
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp molasses
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, ginger, cinnamon, nutmeg, and salt in a bowl.
- Cream butter and brown sugar until light and fluffy.
- Beat in egg, vanilla extract, and molasses.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Divide dough in half. Roll each half into a log.
- Twist the two logs together to create a swirl effect.
- Slice into 1/2-inch thick cookies and place on baking sheets.
- Bake for 10-12 minutes until edges are set.
- Cool on baking sheets for 5 minutes before transferring to wire racks.
