- 2 tbsp (30g) unsalted butter
- 1/4 cup (50g) granulated sugar, plus extra for coating ramekins
- 3 large eggs, separated
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1 tsp cocoa powder (for dusting)
- Preheat oven to 375°F (190°C). Butter and sugar four 6-oz ramekins.
- Melt chocolate and butter in a double boiler, then let cool slightly.
- Whisk egg yolks, 1/4 cup sugar, salt, and vanilla until pale.
- Fold melted chocolate into egg yolk mixture.
- Beat egg whites until soft peaks form, then gradually add remaining sugar until stiff peaks form.
- Gently fold egg whites into chocolate mixture.
- Divide batter into ramekins, smooth tops, and run a thumb around the edges.
- Bake for 12-15 minutes until risen but slightly jiggly in the center.
- Dust with cocoa powder and serve immediately.
