- 1 lb country-style ham, diced
- 1 cup dried white beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups chicken broth
- 1 bay leaf
- 1 tsp black pepper
- Salt to taste
- Soak the beans overnight in water.
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Add diced ham and sauté for 5 minutes.
- Drain and rinse the beans, then add to the pot.
- Pour in chicken broth and add bay leaf and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove bay leaf and season with salt to taste.
- Serve hot.
