A hearty and comforting soup made with country-style ham and beans.

Ingredients

  • 1 lb country-style ham, diced
  • 1 cup dried white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 tsp black pepper
  • Salt to taste

Instructions

  1. Soak the beans overnight in water.
  2. In a large pot, sauté onion, carrots, and celery until softened.
  3. Add garlic and cook for another minute.
  4. Add diced ham and sauté for 5 minutes.
  5. Drain and rinse the beans, then add to the pot.
  6. Pour in chicken broth and add bay leaf and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Remove bay leaf and season with salt to taste.
  9. Serve hot.

  • Store leftovers in the refrigerator for up to 3 days.
