  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. Cream butter and sugars until fluffy. Beat in egg and vanilla.
  4. Gradually mix in dry ingredients.
  5. Fold in cranberries, pistachios, and white chocolate chips.
  6. Drop tablespoon-sized dough onto baking sheet, spaced 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden.
  8. Cool on baking sheet for 5 minutes, then transfer to wire rack.

Notes

  • Store in an airtight container for up to 5 days.
  • For crispier cookies, bake an extra 1-2 minutes.
  • Substitute walnuts for pistachios if preferred.
