- 2 lbs fresh spinach, washed and trimmed
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp nutmeg
- Salt and pepper to taste
- Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water.
- In a pan, melt butter over medium heat. Add onion and garlic, sauté until soft.
- Add heavy cream, Parmesan, nutmeg, salt, and pepper. Stir until smooth.
- Chop the spinach and mix it into the cream sauce. Cook for 3-5 minutes until heated through.
- Serve warm.
Notes
- You can use frozen spinach if fresh is unavailable. Thaw and drain well before using.
- For a lighter version, substitute half-and-half for heavy cream.
