- 1 lb boneless chicken breast, diced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 lb potato gnocchi
- 1 cup spinach, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
