Creamy Chicken Gnocchi Soup

A rich and comforting soup with tender chicken, pillowy gnocchi, and a creamy broth.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 pack (16 oz) potato gnocchi
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery for 5 minutes until softened.
  4. Pour in chicken broth and bring to a simmer.
  5. Add gnocchi and cook for 3-4 minutes until they float to the top.
  6. Reduce heat to low, stir in heavy cream, thyme, and parsley.
  7. Return cooked chicken to the pot and simmer for 5 minutes.
  8. Season with salt and pepper. Serve hot.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the soup before adding cream.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Store leftovers in the fridge for up to 3 days.
