A rich and creamy chicken gnocchi soup with tender chicken, soft gnocchi, and a velvety broth.

Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless chicken breast, diced
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb potato gnocchi
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink. Remove and set aside.
  3. In the same pot, add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Pour in chicken broth and bring to a simmer.
  6. Add gnocchi and cook according to package instructions.
  7. Return chicken to the pot.
  8. Stir in heavy cream, thyme, oregano, salt, and pepper.
  9. Simmer for 5 minutes.
  10. Add spinach and cook until wilted.
  11. Serve hot.

Notes

  • Use pre-cooked gnocchi to save time.
  • Substitute kale for spinach if preferred.
  • Store leftovers in an airtight container for up to 3 days.
