- 1 cup coconut milk
- 1/2 cup water
- 1/4 cup sugar
- 2 teaspoons gelatin powder
- 1/2 teaspoon vanilla extract
- In a saucepan, combine coconut milk, water, and sugar.
- Heat the mixture over low heat until the sugar dissolves.
- In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes.
- Add the bloomed gelatin to the warm coconut mixture and stir until dissolved.
- Remove from heat and stir in vanilla extract.
- Pour the mixture into cups and refrigerate for at least 2 hours until set.
