Ingredients

  • 1 cup coconut milk
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 teaspoons gelatin powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine coconut milk, water, and sugar.
  2. Heat the mixture over low heat until the sugar dissolves.
  3. In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes.
  4. Add the bloomed gelatin to the warm coconut mixture and stir until dissolved.
  5. Remove from heat and stir in vanilla extract.
  6. Pour the mixture into cups and refrigerate for at least 2 hours until set.
  7. Serve chilled and enjoy.

Notes

  • Use unsweetened coconut milk for less sugar.
  • Add fruit pieces for extra flavor.
