A quick and flavorful one-pot meal with tender chicken, orzo, and a creamy lemon sauce.

  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 1 tbsp fresh parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then cook for 5-6 minutes per side until browned. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds until fragrant.
  4. Add orzo and toast for 1-2 minutes.
  5. Pour in chicken broth and bring to a simmer. Cook for 8-10 minutes until orzo is tender.
  6. Stir in heavy cream, lemon juice, and zest.
  7. Slice chicken and return to the skillet. Simmer for 2-3 minutes.
  8. Sprinkle with parmesan and parsley before serving.
