  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, cook until soft.
  3. Add potatoes, broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Blend half the soup until smooth, then return to the pot.
  6. Stir in heavy cream and heat through.
  7. Serve hot.
