  • 1 lb ground beef (or plant-based substitute)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic. Cook until soft, about 3 minutes.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles. Simmer for 15 minutes, stirring occasionally.
  5. Reduce heat to low. Stir in heavy cream and cheeses until melted.
  6. Serve hot, garnished with fresh basil.

Notes

  • For a thicker soup, simmer uncovered the last 5 minutes.
  • Substitute ricotta for heavy cream if preferred.
  • Freezes well for up to 3 months.
