Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken with salt and pepper, then cook until golden brown (about 5-6 minutes per side). Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Add chicken broth and scrape up any browned bits.
  5. Stir in heavy cream, Parmesan, and Italian seasoning. Simmer for 2-3 minutes.
  6. Add spinach and sun-dried tomatoes, stirring until spinach wilts.
  7. Return chicken to the skillet and simmer in the sauce for 5 minutes.
  8. Serve hot.
