- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/4 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Heat olive oil in a skillet over medium-high heat.
- Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add heavy cream, chicken broth, and sun-dried tomatoes. Simmer for 2 minutes.
- Stir in spinach and parmesan cheese until spinach wilts and sauce thickens.
- Return chicken to the skillet and coat with the sauce. Serve hot.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
- Use fresh garlic instead of garlic powder if preferred.
