A rich and creamy chicken dish with sun-dried tomatoes, spinach, and garlic, inspired by Tuscan flavors.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt, pepper, and Italian seasoning, then cook for 5-6 minutes per side until golden. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  5. Pour in heavy cream and stir in Parmesan cheese until smooth.
  6. Return chicken to the skillet and simmer for 2-3 minutes to thicken the sauce.
  7. Serve warm.

Notes

  • Use a wide skillet to ensure even cooking.
  • Adjust creaminess by adding more or less Parmesan.
