  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, then cook for 5-6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Add chicken broth, heavy cream, and Parmesan cheese. Stir until smooth.
  5. Mix in spinach, sun-dried tomatoes, and Italian seasoning.
  6. Return chicken to the skillet and simmer for 5 minutes until sauce thickens.
  7. Serve hot.
