- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup brown sugar (for topping)
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the pan bottom.
- Bake crust for 10 minutes. Let cool slightly.
- Beat cream cheese and sugar until smooth. Add eggs one at a time.
- Mix in vanilla and sour cream. Pour over crust.
- Bake for 30-35 minutes until set. Cool completely.
- Sprinkle brown sugar evenly over top. Caramelize with a kitchen torch.
- Chill for 2 hours before serving.
