A delicious fusion of crème brûlée and cheesecake in bar form. These bars feature a creamy cheesecake layer topped with a caramelized sugar crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan bottom.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time.
  5. Mix in vanilla and sour cream. Pour over crust.
  6. Bake for 30-35 minutes until set. Cool completely.
  7. Sprinkle brown sugar evenly over top. Caramelize with a kitchen torch.
  8. Chill for 2 hours before serving.
