A classic French dessert with a creamy custard base and a caramelized sugar topping.

  • 2 cups heavy cream
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the cream with the vanilla until just boiling.
  3. In a bowl, whisk egg yolks and sugar until combined.
  4. Slowly pour the hot cream into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into a jug.
  6. Pour the custard into ramekins.
  7. Place ramekins in a baking dish and fill with hot water halfway up the sides.
  8. Bake for 30-35 minutes until set but still jiggly in the center.
  9. Cool to room temperature, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle sugar on top and caramelize with a torch or broiler.

  • Use fresh vanilla for the best flavor.
  • Ensure the custard is fully cooled before adding sugar for caramelizing.
  • Store leftovers in the refrigerator.
