- 2 cups heavy cream
- 1 vanilla bean or 1 teaspoon vanilla extract
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup sugar for topping
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the cream with the vanilla until just boiling.
- In a bowl, whisk egg yolks and sugar until combined.
- Slowly pour the hot cream into the egg mixture, whisking constantly.
- Strain the mixture through a fine sieve into a jug.
- Pour the custard into ramekins.
- Place ramekins in a baking dish and fill with hot water halfway up the sides.
- Bake for 30-35 minutes until set but still jiggly in the center.
- Cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top and caramelize with a torch or broiler.
