- 2 cups heavy cream
- 1 vanilla bean or 1 tsp vanilla extract
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and vanilla until just simmering.
- In a bowl, whisk egg yolks and granulated sugar until pale.
- Gradually add the warm cream to the egg mixture, whisking constantly.
- Pour the mixture into ramekins.
- Place ramekins in a baking dish and fill the dish with hot water to halfway up the sides of the ramekins.
- Bake for about 30-35 minutes until set but slightly jiggly.
- Let cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a torch or broiler.
Notes
- Use fresh vanilla beans for the best flavor.
- Allow time for chilling before serving.
