Crème Brûlée is a creamy dessert with a caramelized sugar topping.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean or 1 tsp vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla until just simmering.
  3. In a bowl, whisk egg yolks and granulated sugar until pale.
  4. Gradually add the warm cream to the egg mixture, whisking constantly.
  5. Pour the mixture into ramekins.
  6. Place ramekins in a baking dish and fill the dish with hot water to halfway up the sides of the ramekins.
  7. Bake for about 30-35 minutes until set but slightly jiggly.
  8. Let cool, then refrigerate for at least 2 hours.
  9. Before serving, sprinkle brown sugar on top and caramelize with a torch or broiler.

Notes

  • Use fresh vanilla beans for the best flavor.
  • Allow time for chilling before serving.
  • Store in the refrigerator until ready to serve.
