A crispy and flavorful Middle Eastern dish made from ground chickpeas and herbs, perfect for sandwiches or salads.

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 3 garlic cloves
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp baking soda
  • 2 tbsp flour
  • Vegetable oil for frying

Instructions

  1. Drain soaked chickpeas and pat dry.
  2. Combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper in a food processor.
  3. Pulse until mixture is finely ground but not pasty.
  4. Transfer to a bowl and mix in baking soda and flour.
  5. Shape mixture into small balls or patties.
  6. Heat oil in a pan over medium heat.
  7. Fry falafel in batches until golden brown, about 3-4 minutes per side.
  8. Drain on paper towels and serve hot.

Notes

  • Do not use canned chickpeas—they will make the mixture too wet.
  • For extra crispiness, chill the mixture for 30 minutes before shaping.
  • Bake at 375°F for 20 minutes for a healthier option.
