A simple and delicious creamy Tuscan chicken recipe made in a crockpot.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add heavy cream, chicken broth, Parmesan cheese, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Stir gently to combine.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Add spinach in the last 30 minutes of cooking.
  6. Serve hot over pasta or rice.

Notes

  • You can use half-and-half instead of heavy cream for a lighter version.
  • Add more spinach if you prefer.
  • Store leftovers in an airtight container for up to 3 days.
