A rich and creamy coconut curry made without dairy.

Ingredients

  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (bell peppers, carrots, peas)
  • 1 tablespoon soy sauce
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pan over medium heat.
  2. Add onion and sauté until translucent.
  3. Stir in garlic and ginger; cook for 1 minute.
  4. Add curry powder and cook for another minute.
  5. Pour in coconut milk and bring to a simmer.
  6. Add vegetables and soy sauce; cook until tender.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro before serving.

  • You can add protein like tofu or chickpeas.
